This wine is made from 100% Canaiolo, fermented in concrete. Canaiolo is a lesser-known varietal usually blended in the wines of Chianti, but rarely seen as a single varietal bottling. La Torre alle Tolfe's Canaiolo is extremely unique and equally as delicious. A longer 30 day skin maceration coupled with a warm 2020 vintage give the wine some serious presence in the glass. It is elegant but firm, with flavors of sour black cherry, blackberry, dried herbs, and fennel seed, and well-integrated powdery tannins. Organic and delightful. Drink this with a lamb ragú with papardelle or eggplant parmigiana and spaghetti.
