A century ago, Semillon was South Africa’s main grape, producing up to 95% of the country’s wines. Oddly here, the vineyards shift between green & red bunches each year, creating a unique mutation known as Semillon Gris.
Thorne & Daughters’ Tin Soldier takes the orange approach, leaving the fruit on the skins for about a week & aging it for 9 months in wood. Focusing on the interplay of savory & sweet, aromas of spice, papaya, gingersnaps, citrus peel, marzipan, & orange blossom surround a richly textured palate of lime peel, toffee apple, jasmine tea, & saline oyster shells.
