Since 1887, the distillery has been Bologne on a unique terroir between the sea and the mountains. The velvety and fruity style of Bologne rums can be explained by the magic that takes place between our volcanic terroir, the iodized air, the spring water, the exposure to the sunset of our estate and our varieties of cane.
This unique alchemy allows us to sublimate the expression of each variety of cane by planting only the most qualitative varieties whose aromatic potential best expresses the typicity of the rums Bologne.
In a perpetual quest for quality, Bologne has chosen the parcel management of his estate, which alone guarantees a perfect match between the terroir and the chosen variety. Harvested at their optimum point of ripeness, our canes are immediately transported to the distillery to be crushed, fermented and distilled: their freshness is total and we thus prevent them from suffering from premature oxidation.
Bologne applies a very precise low-temperature distillation style which, thanks to our copper column, favours the expression of the terroir and our cane varieties, finesse and elegance while preserving the aromas as much as possible.
Medalist 3 times at the Paris agricultural competition (Gold in 1993 and 1999 and silver in 2000).
