Philokalia is a natural wine project founded in 2015 by architect Sari Khoury in the garage of his home in Bethlehem, Palestine.
Inspired by artist and wine researcher Nasser Soumi, who spoke of Palestine's 7,000-year wine history, Sari works with rare indigenous grape varieties native to Palestine. The name means 'love of the beautiful, the good' in ancient Greek.
Farming & Cellar: Ungrafted, dry-farmed bush vines at 930-940m altitude on clay-limestone soils. Custom clay jars preserve distinct form and taste. No additions, no fining, no filtration. The 'Grapes of Wrath' cuvée comes from 90-year-old vines that survived military destruction.
