Founded by husband & wife John House & Ksenija Kostic in 2011, Ovum celebrates the many diverse expressions of Riesling, with low intervention methods that let the vintage and the vineyard shine.
Big Salt brings together a melange of aromatic white grapes grown throughout Oregon’s wine regions, averaging 35 years. Grown on a mix of volcanic ash, basalt, marine sediment, alluvial, and serpentine soils the grapes sit between 250-1500 feet elevation. Native yeast co-fermentation, with partial skin contact and extended lees contact in steel.
Reminiscent of a day at the beach, Big Salt is fresh, dry, and breezy. Aromatic notes of bergamot, pamplemousse, jasmine, and meyer lemon join white tea florals, fresh ginger, and juicy peach. The racy acidity tempers the beeswax-y texture on the sea-spray laden finish.
