Destemmed 50+ year old Šipon (aka Fermint) grapes go through wild yeast fermentation in steel, with ancestral method fermentation continuing in the bottle.
Deliciously cloudy, with yellow apple, stone fruit, orange & lemon zest, and meadow herbs. A burst of acidity brings a stony minerality to a steely, salty, savory finish.
