Manuel Cantalapiedra is a 3rd generation winemaker, who has been experimenting with biodynamics & minimal intervention winemaking. Lirondo comes from 30+ year old vines from the Las Escuclillas vineyard and sees 12 hours of skin contact, wild yeast fermentation, and 8 months on the lees in tank. Aromatic, bright & electrifyingly fresh. Salty, yeasty, pineapple & citrus.
