Laurent Cazottes relaunched the 12th generation family estate in 2010, expanding his father’s eau de vie distillerie into an organic, polycultural farm. He farms organically & biodynamically, and uses a soft touch in the winery to rediscover the natural expression of the local terroir.
Native to Gaillac, Prunelart is one of the parent grapes of Côt (aka Malbec). Largely forgotten in the post-phylloxera era, Cazottes has a single hectare of the 14 hectares remaining in the world. Destemmed, with a short maceration on the skins before fermentation & malolactic, with aging in vats.
Bright, fresh & lively, with wild sour cherry, plum, and purple fruit tempered by gamey notes of licorice, spice, and leather. Ripe tannins, bright acidity and peppery finish make this a perfect bistro or charcuterie wine.
