CALX comes from Filippo Cassano, owner of Cantine Polaverna in Puglia. “Calx” is the Latin term for the limestone, common to the soils around Puglia on Italy’s boot heel.
This Primativo (aka Zinfandel) comes from 20-30 year old vines, grown on iron rich soils over a layer of limestone. Fermented in steel, with spontaneous malo for added texture.
Super drinkable, fresh, & bright, with zingy red berries and dried figs, along with fresh herbs, cedar, and a stony minerality. Lighter & more elegant than many Primativos or Zins, CALX is great with a slight chill.
