Jim Fischer & Jenny Mosbacher started Fossil & Fawn making just small amounts of wine from Jim’s family vineyard, Silvershot, and quickly spiraled into a much more complex, frustrating, terrifying, and unbelievably rewarding venture. They use a natural approach, allowing the vines to do the talking with the least amount of manipulation possible.
A blend of Pinot Noir barrels sourced from three organically farmed, own-rooted, dry-farmed vineyards, No Clos Radio (24%), Silvershot Vineyards (29%), and Finnigan Hill Vineyard (37%). Vines range from 14 to 47 years, grown on wind-blown loess and marine sediment soils at 300-700ft elevation. Most of the fruit was destemmed, with 14% whole clusters added. Spontaneously fermented with 14 days of maceration on the skins. Aged 9 months in a mix of neutral French & Oregon oak before bottling without fining, filtration, or sulfur.
Brambly red berries, violets, walnuts, & dried herbs. Earthy notes of smoky leather, wet rocks, mushrooms, and brick dust lead to a suave saline finish. The bright acidity & robust tannins will soften with time or decanting.
