Angelo Fongoli took over his family's estate in 2010 and eschewed the monoculture focus the winery took in the 1980s. Now the estate is certified biodynamic and the wines are made naturally. The Trebbiano sits on the skins for 2 days, giving it a lovely color and flavor of steeped chamomile, almonds, pears, sherry, and herbs.
