Josef & Eva Maria Bauer have 17 hectares of high-altitude vines in the Grossriedenthal area of Wagram, farmed with organic & biodynamic methods.
Grapes come from 30+ year-old vines grown on drifted loess soils. For Hollötrio, all grapes macerate on the skins for at least 5 hours, with 20% seeing 3 weeks of skin contact. After blending, the wine sits 4 months on the lees in steel.
Immensely crushable, with notes of yellow apples, melons, pears, quince & chamomile. The skin contact highlights Grüner’s classic white pepper & spice without too much tannic grip or funk.
