Nicolas Romy and his father Dominque take a natural, hands-off approach to the vineyards to maintain the biological balance of the vines and soil, continuing the family’s winemaking tradition since the 1700s.
Their 30 hectare estate is located in Morancé, part of Les Pierres Dorées, which is named for the golden color of the chalky-clay soils.
This Bourgogne Blanc comes from 4 hectares of vines in the Clos de la Chapelle vineyard. The grapes undergo a cool fermentation in stainless steel, with partial malolactic fermentation before 8 months in steel to balance creamy richness and crisp minerality.
Aromatic, fruity, fleshy, and refreshing, with notes of tart lemon-lime-infused apple, pear, and peach.
