Combes au Mas is the passion project of husband and wife Thomas Hayun and Marie-Sophie Julien. They grow their vines on 16 hectares at the foot of Mont Ventoux in the Rhône region of southern France, with a very conscientious approach, including organic farming and polyculture (a form of agriculture in which several species are cultivated in the same place at the same time, mimicking the diversity of natural ecosystems). Their vineyards are loved and cared for like no other.
The origin of the domaine's name, Combes au Mas, is linked to the fact that this is a place with a water source, where water flows all year round, even in summer. The farm was founded in 1850, and the source of the water flows from Mont Ventoux to Vallon, where the domaine is located, and is also known as Combes. Mas refers to the path of water, a word often used in the south of France. The winery is kept alive thanks to this precious water, so the name was given to it.
RIGAOU means "red valley" in French and refers to a bird with an orange neck. In France, the bird called "rouge-gorge" is called "Komadori" in Japanese. It refers to a bright, small red.
The Grenache is destemmed and macerated for 6-7 days, the Carignan for 14-15 days, and aged in amphorae for 1 month. It is brewed and aged without SO2. It is a light, natural wine with fresh fruitiness and a crisp, greedy side, and can also be drunk chilled. It is very easy to drink and easy to digest. It is a wine that can be enjoyed casually with friends to share the pleasure, with light meals, meat dishes, grilled vegetables, etc.
