Sardines in olive oil Conservas de Cambados , a Galician preserve made in-house by Conservas de Cambados , a traditional cannery deeply rooted in Galicia, having produced preserves in an artisanal way since 1985.
There are many names that Galicians use to refer to their small sardines (Sardina pilchardus). In the Rías Baixas it is better known as Xouba , and in the Rías Altas as Parrocha. Galicians often say that when something has value for us, we look for many names for it, and the sardine is a highly prized fish , especially when preserved , when it is as tiny as these. They can certainly be classified as gourmet preserved sardines.
Sardines in Olive Oil Conservas de Cambados come exclusively from the Galician Rías, obtained through a fishing method called " purse seine" with the Ría de Arousa standing out among them, which is distinguished by its marine richness and the quality of the raw material that comes from its waters, where the town of Rianxo is located, a fishing town with a great sardine tradition.
