Civic Winery is an urban winery project in downtown Eugene, Oregon, celebrating the wines of the Willamette Valley. The focus is on organic & biodynamic grape growing, gentle extractions with indigenous yeasts, and minimal intervention techniques.
Grapes come from the Erratic Oaks Vineyard in the Willamette Valley. Spontaneously fermented with native yeasts, then aged in clay amphora.
