Cantine Marilina was created by winemaking veteran Angelo Paternò, who has since handed the reins to his daughters Marilina & Federica. They take a polycultural, minimal intervention approach to their 60 hectare estate.
From hand harvested grapes from the Noto region, grown on white, calcareous soils. Spontaneous fermentation in concrete tanks with indigenous yeasts, and bottled in the méthode ancestral style with Moscato must.
The bright bubbles hold aromas of honey, peach, ginger, chamomile & sea spray. Lemon méringue, green apples, & orange blossoms emerge on the palate, with a saline minerality, trace of herbaceousness, and fresh acidity.
