Cider Master Cyril Zang’s Eau de Vie de Cidre is the stuff of legends, not quite made from unicorn horns but damn close.
A uniquely pure distillate of 30+ varieties of Calvados apples made in collaboration with the illustrious Jean Roger Groult. Aged on the lees for 10 months after a gentle press then double distilled in a tiny direct fire still.
Powerfully complex & clean with a wonderful weight & texture. Apple, baking spice, cinnamon, & a savory, umami character of earth & dried foliage.
