J. Henry is a family farm, located 20 miles north of Madison. Three generations of Henrys have raised heirloom seed corn here since 1946.
Using a unique variety of heirloom red corn, developed by the University of Wisconsin in 1939, small batches of just 16 barrels are distilled at 45th parallel Distillery, blended & proofed. The old, uninsulated family dairy barn has been converted to the aging facility, using Mother Nature as the only climate control.
Great structure & depth, with notes of stone fruit, dried apricot, caramel chews, sweet corn, and light rye. Crème brûlée, brioche, toffee, soft spice, and dried fruits emerge when sipped neat, with a few drops of water adding extra creaminess and texture.
60% Red Heirloom Corn, 14% Heirloom Glacier Winter Wheat, 14% Heirloom Spooner Rye, 12% Malted Barley.
