Antxiola's vineyards sit on the coast about 90 meters above the sea. The sunny, windy slopes allow the grapes to ripen and remain dry, avoiding fungus & rot. Harvested by hand then fermented in steel with indigenous yeasts, it's bottled young to capture some CO2 for a slight natural effervescence. Zesty citrus & orchard fruit with jasmine, green tea, tangerine, & green apple. Minerally, salty, & spritzy.
