Very cool, very novel style of spirit from the town of Comitan in Chiapas, Mexico, that hits our shores largely thanks to the exploding popularity of Oaxacan mezcal and the subsequent rush to show off everything else that's been hiding south of the border. Part cane spirit, part distilled pulque, the fermented sap of the maguey plant—the fermented piña of the same results in mezcal—comiteco can resemble a midway point between rum and mezcal. Funky, fleshy fruit, strong cane backbone. Sui generis.
