The wild agave cultivar Tepeztate can take as long as 35 years to reach maturity, so its piña is a precious heart that deserves care and ultimately some reverence. Commonly a rather spicy mezcal, in Yuu Baal's bottle the Tepeztate comes across as sweetly herbal, minty, and floral, with a subtler touch of hot pepper. Master distiller Isaias Martinez Juan, working in San Juan del Rio, controls the quality for what is ultimately a tremendous length of time. Smoky and sweet finish.
