Vignale di Cecilia sits at the foothills of Mount Cecilia in the Euganean Hills. The small farm has been in the Brunello family for over 45 years. Paolo Brunello is a classically trained violinist who took control of the family estate in 1998. Paolo is a true artisan of the vine, seamlessly blending tradition and innovation with his wines. The estate has 12 hectares of vines, and another 4 hectares of woods, olive trees & lawns, all organically farmed.
Cóvolo is the flagship of the estate, and the wine that best reflects Paolo’s vision. The vineyards sit at 50 meters elevation on 3.5 hectares of volcanic, clayey, calcareous soils, where the vines get optimal southwestern exposure for perfect ripening. Native fermentation takes place in glass-lined cement tanks for aromatic freshness & crunchy fruit. The wine then transfers to concrete & old barques to age for 12 months.
Paolo strives to make a wine of terroir that is easy-drinking but rich in emotions. Cóvolo strikes a beautiful balance between classic vegetal notes of Cabernet & Merlot, and the fruity, intriguing roundness of the wines from Colli Euganei. Fruity, yet herbaceous, it shows notes of black & red cherries, violets, white pepper, undergrowth, and earth. A great choice for pasta night, especially with red meat or mushrooms.
