Brendan & Laura Carter are passionate about the soil & produce of Australia, and are dedicated to showing the rest of the world the wonder of native Australian ingredients. They use minimal intervention techniques, such as zero irrigation, 100% wild ferment, and no added enzymes, nutrients, or sugars.
Grapes were grown on the Ricca Terra vineyards in the township of Barmerara, meaning “water place” in the native Ngawadj language. The climate here is dry, with hot summers, warm days, and cool nights in winter, making it a perfect location for hot-climate Italian varietals that don’t need a lot of water.
Aromas of salted citrus & herbs open, with hints of jasmine, lemongrass, and meringue. The gentle fizz surrounds a palate of poached Asian pears, green apples, white nectarine, frangipani, and a grassy freshness. Finishing like the ocean on a summer day, with a savory, salty finish.
80% Vermentino, 20% Fiano. Organic. Natural.
