Stéphane Tissot claims he is the only one in the Jura to use their Vin de Paille (a concentrated straw wine made from dried grapes) to spark the secondary fermentation instead of the typical Champange yeast.
Richly complex & textured, with notes of crisp apple, orange zest, honeysuckle, & orchard fruit contrasting toasted nuts, dried honey, and brioche undertones before a sea salt finish. Partial vinification in barrel. Aged 15 months on the lees.
50% Chardonnay, 40% Pinot Noir, 5% Poulsard, 5% Trousseau.
