Yves Falmet grew up in his family's vineyards in Champagne and moved to Languedoc after university. While Cinsault is known for rosé or as a blending grape, Falmet makes one of the few single-varietal versions from their old vines. Raspberry, rose petal, and garrigue on the nose meet flavors of cherry, plum, and soft spice. Drink slightly chilled for a great warm-weather red.
