At first glance, one might mistake this for tequila. It’s made from blue weber agave, not far from the Tequila Valley. But Huitzila, Zacatecas is well-known for its mezcal, produced in a traditional style. Pit roasted, tahona milled & spontaneously fermented in steel vats, then distilled copper stills. Fresh & grassy, with orange, wood, & subtle smoke, ending with a gentle finish.
