The Podkubovšek family has always cherished the long history of winemaking in Štajerska, where French Carthusian monks first planted Pinot Noir & Chardonnay vines in the mid-12th century.
The night here in Loče are refreshingly chilly, with strong winds whipping through the sharp hills and valleys. Sanctum uses no irrigation in the vineyards, with just a little sulfites or copper when necessary. Leptir's hand-harvested grapes grow on steep 45˚ south-facing slopes, ranging from 100-480 meters, on a mix of marl, clay, and sandy soils.
The Pinot Blanc & Pinot Gris were both destemmed into small open-top fermenters and spontaneously fermented on the skins for 14-21 days, then aged in 300-500L neutral Slovenian oak. The Chardonnay was whole bunch pressed, then spontaneously fermented in Slovenian & French oak barrels. After 10 months, the varietals were blended in stainless steel, then bottled unfiltered.
Filled with spicy aromas of dried wildflowers, apricots, pears, and white tea with honey. The bright palate brings tart, juicy notes of plum, apricot, yellow apple and chamomile. Soft tannins round out the long, savory, fresh finish.
50% Pinot Blanc, 40% Chardonnay, 10% Pinot Gris. Sustainable.
