Chicago-based distillery Rhine Hall focuses exclusively on distilling fruit brandies, otherwise known as schnapps or eau de vie. The barrel-aged version of their flagship apple brandy spends 12 months in new American oak, imparting some wood tannin and baking spices to the crisp, clean juice. From Jonagold, McIntosh, Gala, and Cortland varietals, among others, all grown nearby in southwest Michigan orchards.
