After 45 years in the wine business, Joel Peterson (founder/winemaker of Ravenswood) started Once & Future as a small, hands-on project focusing on pure, expressive wines from some of California’s most unique & historic vineyards.
The sandy soils of Oakley Road Vineyard are the key to the survival of some amazing 100+ year old, own-rooted, unirrigated vines. The microclimate of Oakley allows grapes to ripen early, with cooling afternoon breezes contributing to gentle, suave wines.
This Mataro (yet another name for Mouvèdre/Monastrell) comes from 119 year-old, dry-farmed, own-rooted vines. Made in Joel’s signature open-topped redwood fermenters, with full destemming, no berry sorting, indigenous yeasts, and hand punch downs of the cap. This simple, traditional style of winemaking relies on the unique aspects of the vineyard to define the flavor, nature, and quality of the wine, for a unique sense of vintage and place.
Aromas of crushed red berries & sweet cherries join spice, cedar, and floral tones. A dollop of vanilla and caramel from the nicely-integrated 25% new French oak adds roundness and depth. The palate is super expressive & inviting, with soft cherry & plum, bay leaf, and wood smoke. A bright acidity perfectly balances soft, round tannins.
