Third generation winemaker Matija “Matic” Žerjav was just 24 when he took control of the family winery. He cultivates 9 hectares of vines with organic & biodynamic methods, and often experiments with extended skin contact and aging wines in clay amphorae, instead of more common steel or oak vessels.
The mountainous region of Štajerska in northeastern Slovenia has a sharp contrast between warm days & cool nights, making it a perfect region for bright, steely whites. Šipon is the Slovenian name for Furmint, the grape that makes Hungary’s famous dessert wine Tokaji.
Naturally fermented and aged in steel, with some time on the lees, Matic’s is a pure expression of the grape’s fruit. Bursting with stone fruit, orange & lemon zest, it’s steely, salty & lush. The ripping acidity makes you crave glass after glass.
