Édouard Lepesme has 35 acres of organically grown vines just west of Chablis in the little-known region of Côtes d’Auxerre. Six high elevation parcels of Pinot Noir grow on the same Kimmeridgian limestone soils that have made Chablis so famous. Hand-harvested, it is naturally fermented with about half of the grapes left whole-cluster. Aged for one year in 90% older oak barrels of different sizes, and the rest in small steel tanks.
Crunchy & tangy, with bright, snappy fruit. Cherry blossom, red apple skin, brambly black raspberries, licorice, black tea, lavender, and cinnamon with a spicy mineral backdrop. Earthy, yet elegant, with soft, chalky tannins.
