José Dhondt, a 3rd generation winemaker whose grandfather immigrated from Belgium in 1924, has been making wine since 1976. He has 6 hectares spread throughtout several parcels in Côte des Blancs & Sezannes regions.
Vines average 25 years, and Dhondt avoids chemicals as much as possible, preferring low yields with severe debudding. in the winery, the grapes are meticulously sorted, then go to a traditional Coquard vertical wood press before vinifing in small temperature controlled steel vats by lot and aging on the lees for 2.5 years.
Bright & focused, with aromas of oyster shell, pear, and citrus. The palate shows lemon, white flowers, almonds, baked apple, pastry cream, and crushed rocks. The chalky minerality and creamy mousse bring a plush texture & generous fruit before a crisp finish.
