Jean Vesselle’s daughter Delphine now runs the estate with the help of her husband David, continuing the family’s 300+ year history in Champagne. Their 37 hectares are mostly Pinot Noir, with a little Chardonnay, in the Grand Cru village of Bouzy.
“Oeil de Perdrix” refers to the lightly amber color of a partridge’s eye, somewhere in between pink & white, the way Pinot Noir-based Champagnes were made in the early 1900s. Jean found some old bottles in the cellar in 1972, and was amazed at the vibrant aromas & flavors from the delicately-colored bubbles.
Combining classic Champagne elegance with the signature Bouzy power, this beautiful rosé comes from estate vineyards in and around Bouzy, grown on classic chalky terroir.
The 15-30 year old Pinot Noir vines are hand harvested grapes are gently pressed & macerated, then ferment with indigenous yeasts in temperature-controlled steel tanks. A portion of the juice is added via the saignée method. Aged 3 years in the bottle, with 6 g/L dosage.
Floral & expressive, with red & pink roses, lavender, green herbs, and orange zest framing wild strawberry, pomegrante, raspberry & stone fruit flavors. Gorgeously distinctive, elegant, silky, and balanced, with a white pepper-toned racy, saline finish.
