Couvent Rouge is located just outside the town of Deir El Ahma. Originally known for illicit cannabis fields, in 1999 the villagers decided to form a co-op to transition the fields to vineyards. Today, the 200+ growers farm 240 hectares of organic, Fair Trade certified grapes.
Vineyards soar up to 1800m above sea level, in some of the highest vineyards in the Northern Hemisphere, which receive around 300 days of sunlight each year. Left on the lees for 6 months & disgorged using the Ancestral Method. Bottled unfiltered & unfined.
Bright & zingy, the soft bubbles are filled with tropical fruit salad, white strawberry shortbread, triple cream brie, chamomile tea, & subtle yeasty notes.
